Kim is a registered dietitian with a Bachelor of Science in Dietetics from the College of Saint Benedict in Minnesota and an MBA from Oklahoma City University. She has more than 30 years of healthcare food service and clinical nutrition management experience in both contract and self-op. She is currently the System Director of Nutrition and Food Services at Saint Francis Health System. Saint Francis is a seven-hospital system in eastern Oklahoma hosting ten retail operations. Kim has been involved in kitchen renovations of large and small scale. Kim has co-authored posters at FNCE and ASPEN and is a published book author. She has enjoyed collaborating with other dietitians while serving on the Premier Clinical Nutrition Subcommittee and influencing the next generation while on the OSU Dietetic Advisory Board.
